"Baked Camembert Cheese with Thyme and Wine"

Today Poppy had to go to work which required some traveling.  At 5:15 A.M. this obnoxious noise started- was it a low flying plane? the dishwasher motor going haywire? no, maybe it was the fire alarm?...Oh, hold on, it was the alarm clock!  Poppy is so ambitious... but really 5:15 A.M.? And it is raining...UGH!  So, he reaches over and destroys the noise maker and pretends to sleep for thirty more minutes. Needless to say, the day begins.

After the normal routines Poppy is off to work. Mamie is busy getting her chores done and she comes back to find this...


"Please, don't make me get up"




But the day has begun. Soon Poppy is 150 miles to the West, and it is storming the whole time he is driving. Mamie left to take care of a few things, and she  makes it home just in time for the storm to bust loose at our home. In fact, an alert was sent to the area over the cell phone that scared little Pickles and had her rattled for some time.


Poppy is working a little late and Mamie finds a simple recipe to make so when he gets home they'll have something to eat that won't be to heavy to eat late at night. This is what it looks like, and it was just right.




This is a wine baked cheese. (Inspired from Laura Calder)  We'll call it.... 

"Baked Camembert Cheese with Thyme and Wine"

We took a nice portion of  Camembert cheese, poked holes in it with a fork, and then poured a good white wine on it. Then, sprinkled it with some fresh thyme and cracked black pepper. (all this was in the dish as shown). Then we wrapped the whole dish with foil and baked in a 400 degree oven for 10 minutes.

(Poppy looked for the Camembert cheese in a little round box, but our cheese selections in the markets around where we live stink; and not in a good, cheesy way...thus he had to purchase a little wedge, but it worked out baked in a dish.)

The baking melts the cheese, and allows the wine and thyme to blend in. We served ours with a fresh Kalamata Olive bread. Just dip the bread into the melted cheese sauce and enjoy.

This simple treat would be great for a starter or as we did; as a late night snack.  Easy and delicious.

  3. Ha! I think Pickles has the right idea. That bed sure does look comfy.
    I've been working in the garden all day and just came in to reward myself with a glass of wine on the patio. That wine baked cheese looks like just the thing to go along with it. I was just reading that thyme is considered a "super food". Who knew?

  4. Pickles has a routine...she and Stella sleep in their beds on the sunporch at night, but in the morning, she makes a b-line for our room, and burrows under the covers. After I (Mamie) snuggle with her a bit, I get up and get on with the day. She usually gets in my spot- like she did here, but she looked like a little human this morning-too cute! I wuv her!
