A Night for Bow Ties

Tonight we made an old time favorite for dinner. This one is easy yet OH so tasty. Bow Tie pasta with chicken and sausage. There are many versions but this is the way we like to make it.  We like some seasoning to tease our taste buds (yet not too much). Make it your own and use what you have on hand.  Another thing nice about this recipe is it is easy and quick. So here it is:



3   skinless and boneless Chicken breasts (tonight we used 4 thighs)
1   pound of sausage (we prefer smoked or Italian mild) depending on 
     mood
1   pound of bowtie pasta
1   tablespoon olive oil
2   cloves garlic, sliced
14.5  ounces of crushed tomatoes, or fresh chopped in season 
1/2 cup of good red wine (the rest is enjoyed with the meal and while 
     cooking) :)
2   tablespoons chopped fresh basil
1   teaspoon fresh rosemary, chopped
1   teaspoon of cajun seasoning (adjust to your personal liking)
     salt and pepper to taste
1/2 cup of cream (or 1/2 & 1/2)

Directions
1  Wash chicken and cut into large bite size pieces. Remove casings 
    from sausage and cut into large pieces. In a large skillet over 
    medium low heat, heat oil, then add garlic and saute till 
    beginning to brown, then remove
    garlic from oil.(NOTE: Start cooking your pasta so it will be ready
    to add) 
2  Add chicken and sausage to skillet and brown both lightly until the
    pink is barely visible, then add cajun seasoning and blend well.
    Add the tomatoes and wine. Bring to a boil and simmer for 
    10 minutes. Add rosemary and basil, then simmer for another 
    10 minutes. Salt and pepper to taste. Add the cream and heat
    through. Add cooked, drained pasta to the skillet mixture. 
    Toss and serve. (we like to add fresh grated Parmesan to top it 
    off). 


This is wonderful with warm crusty bread!!!


This meal is so wonderful that the chickens even like it.
